Why one cup isn't one weight

Volume measures depend on how the ingredient is packed, so a cup of flour can weigh anywhere from about 120 g (fluffed and levelled) to 160 g (scooped and packed). That's why serious bakers weigh ingredients.

This converter uses widely published reference weights and tells you the convention behind each one. When sources disagree — flour is the famous case — we say so rather than pretending there's a single answer.

Why isn't one cup always the same grams?
Because density differs by ingredient and by how it's packed. A cup of flour is about 120 g; a cup of sugar is about 200 g; a cup of cocoa is about 84 g.
Which cup size should I use?
Most US recipes use the US customary cup (240 ml). UK and Australian recipes often use a 250 ml metric cup, which holds slightly more.
How accurate is this?
It uses widely published reference weights. For flour especially, sources disagree (120 g vs 140 g per cup), so for best accuracy, weigh with a scale.
